Grammar experts would speak of onomatopoeia. The more romantic ones would not choose that word and would drop the technicality to speak of the “pric o prac” .
“Pric” and “Prac” are the transcription of the sound of the pepper while it is shredded by the scissors. The “pric o prac” is the far and yet near echo of our grandparents’ recipes. What we are talking about is a preserve of peppers of various colors, easy to make, with a strong and slightly spicy flavor. Typical of Molfetta, it is like a timeless classic, a mixture of flavouars and aromas that make the “pric o prac” practically eternal.
Excellent on the crostini or served as a side dish, its excellence depends on the oil used to prepare it. If the oil is excellent, this preserve will be excellent. A simple recipe, which lives and comes alive especially in September. Aria di Mare “pric o prac” is made just as our grandmas recommended, exclusively with “l paparul d mbacc e mer”, that is, with peppers with a natural consistency and flavour due to the sea breeze that caresses them until they are collected at the end of August.
We wanted to follow that ancient and precious custom. Because we are like our grandma Lucrezia: if the greengrocer did not give her “those peppers”, she knew it instantly. And she didn’t even start preparing the preserve.
