Pizzarello Molfetta style – “ù pezzarìedde”

Today’s is not just a recipe, but a real custom of the city of Molfetta during Lent and Holy Week.
Molfetta’s pizzarello , called “ù pezzarìedde” or “ù pizzaridd”,is a characteristic oval-shaped sandwich with pointed ends, stuffed with tuna and abundant olive oil. Some enrich it with anchovies and capers.

But why when we talk about the Molfetta’s pizzarello we talk about tradition? In the past, the processions of the Holy Friday and Saturday took place in the middle of the night. When dawn came, the hungry participants and the members of the city brotherhoods ate the so-called “pezzarìedde”. The streets of Molfetta were full of taverns that offered these sandwiches well filled with tuna and golden oil along with a good glass of wine!

Even today, at Easter time, on the tables of Molfetta the pizzarello is always there to remember with great devotion these crucial moments of the city Christian tradition.
